Magari tra le colline, liberamente, senza restrizioni e paure. <\/strong>Andare a trovare persone care, decidere di fermarsi a mangiare in un ristorante. E poi camminare senza sosta, visitare un museo, ammirare posti che sono sempre stati l\u00ec, vicino casa, ma che oggi ritrovo come fosse la prima volta.<\/p>\n\n\n\n<p>Credo che tutto questo sia sentito da tanti.<\/p>\n\n\n\n<p>Uno dei posti che mi piacerebbe visitare, quando si potr\u00e0, \u00e8 proprio vicino a me. Si trova nelle Langhe, tra le colline. E&#8217; una piccola azienda piemontese di produzione dolciaria: <strong><a href=\"https:\/\/www.relanghe.it\/it\/\">Relanghe<\/a><\/strong>. Una realt\u00e0 nata nel 1994 ad Alba da un&#8217;idea della famiglia <a href=\"https:\/\/www.relanghe.it\/it\/\"><strong>Ceretto<\/strong><\/a> che, dopo anni di tradizione vinicola, ha voluto applicare lo stesso rigore nella produzione di nocciole, e parliamo naturalmente della Nocciola Piemonte IGP.&nbsp; Ormai un mesetto fa ho avuto il piacere di assaggiare il loro <strong><a href=\"https:\/\/www.relanghe.it\/it\/torroni\/\">Torrone<\/a>, <\/strong>senza dubbio uno dei loro prodotti di punta: un incontro felice e perfetto tra la Nocciola Piemonte IGP, il miele e lo zucchero. Tutto \u00e8 in equilibrio e ben bilanciato. Una nocciola tostata dal sapore unico, il miele che aromatizza senza essere invasivo nel gusto e nel profumo, e lo zucchero: bianco, assoluto e brillante. Pensate che il miele e lo zucchero vengono cotti per ben sei ore in una caldaia a vapore, fino a formare una miscela dolce cui vengono poi aggiunte le nocciole tostate. Questa miscela viene estratta e poi pressata a mano dentro tradizionali stampi di legno. La frolla sabl\u00e9 senza uova \u00e8 stata creata frullando finemente le nocciole tostate, che sono state poi aggiunte alla farina, allo zucchero e al burro, e con l&#8217;aggiunta di un pizzico di sale, che in questa ricetta ci sta proprio bene. <\/p>\n\n\n\n<p>Questa frolla \u00e8 perfetta anche per preparare ottimi biscotti! Unite poi lo zucchero ed un pizzico di sale, frullate fino ad ottenere un composto ben amalgamato e compatto. Versatelo poi su di una spianatoia, formate un panetto e avvolgetelo nella pellicola. Fate riposare in frigorifero per almeno due ore, meglio se tutta la notte. \u00a0Passato il tempo riprendete l\u2019impasto, stendete la frolla con il matterello su di un piano leggermente infarinato, quindi trasferitela in uno stampo da crostata con fondo amovibile. Rifilate i bordi e con una forchetta bucherellate il fondo. Trasferite di nuovo in frigorifero per 30 minuti.<\/p><p>Preriscaldate il forno a 180\u00b0.<\/p><p><strong>Cuocete la frolla per 20\/25 minuti. <\/strong>Con la pasta avanzata formate dei biscotti, potrete usarli per decorare la torta. E&#039; molto importante rispettare il tempo di riposo della frolla in frigorifero.<\/p><p><strong>Nel frattempo preparate la crema:<\/strong> fate scolare per bene la ricotta. Aiutandovi con un tritatutto frullate il torrone fino a ridurlo in briciole, aggiungetelo alla ricotta ben scolata, montate la panna e con una spatola incorporatela delicatamente al composto. Riprendete la base di frolla alla nocciola e decorate con la crema ottenuta, aggiungete anche qualche biscotto e della granella di nocciole. Fate riposare in frigorifero per almeno due ore prima di servire. <\/p><p><strong>Note:<\/strong> se non trovate la ricotta Seirass andr\u00e0 benissimo anche una ricotta classica di buona
