Anche se come al solito sono indietro su tutto, ci tenevo a regalarvi un&#8217;altra idea. Se vi piacciono le nocciole e avete degli albumi avanzati, questa \u00e8 la ricetta che fa per voi! <strong>I Brutti ma buoni -&#8220;<em>brut e bon&#8221;<\/em><\/strong>&#8211;&nbsp;sono (forse) dei biscotti Piemontesi, dico forse perch\u00e9  documentandomi ho potuto constatare che la loro origine non \u00e8 poi del tutto chiara. C&#8217;\u00e8 chi dice siano nati a Gavirate, vicino Varese. Ma anche a Prato esiste un biscotto simile preparato con le mandorle. Non voglio infilarmi -come spesso capita- in un ginepraio su chi abbia il primato sulla ricetta, quindi mi fermo qui. Di una cosa sono certa: ho sempre visto questi biscotti. Ho imparato a prepararli  da mio padre pasticcere ormai in pensione. Lui ne preparava in grandi quantit\u00e0 in questo periodo, da regalare insieme al pandolce con canditi e rum- altra sua specialit\u00e0. Anche se non sono propriamente biscotti di Natale, era un modo di smaltire tutti gli albumi avanzati del pandolce citato sopra, che vi assicuro erano parecchi!<\/p>\n\n\n\n<p>Dalle mie parti \u00e8 consuetudine trovare in pasticceria -ma anche in panetteria- questo biscotto. Nel cabaret di paste <strong>(Bignole) <\/strong>della domenica -in mezzo a cannoli allo zabaione, bign\u00e8 e crostatine di frutta- molto spesso spunta anche qualche &#8220;brutto ma buono&#8221;. Che serve per fare &#8220;buon peso&#8221; ma anche (secondo la mia personale teoria) a prolungare quel momento di dolcezza. Come in tutte le ricette nonostante la sua apparente facilit\u00e0 di esecuzione anche questa ha dei tempi ben precisi da rispettare.<\/strong> La loro caratteristica principale \u00e8 quella di essere <strong> <\/strong>friabili all&#8217;esterno, poi morbidi e leggeri. Insomma, il loro sapore \u00e8 semplicemente delizioso. <\/p>\n\n\n\n<p>L&#8217;albume a temperatura ambiente viene montato a neve fermissima, poi vengono aggiunte le nocciole e lo zucchero. Questa miscela di ingredienti ben amalgamati viene poi versata in una pentola e fatta cuocere per una decina di minuti. In questo modo lo zucchero all&#8217;interno fa s\u00ec che il composto diventi leggermente brunito ed appiccicoso. Versate poi in una pentola dai bordi alti. Fate cuocere il composto a fiamma bassa per una decina di minuti, mi raccomando sempre mescolando! Spegnete il fuoco e lasciate intiepidire in modo che risulti pi\u00f9 compatto. Passato il tempo mettete il composto in una tasca da pasticeria, formate dei mucchietti ben distanziati su di una teglia foderata di carta forno. <\/p><p>Infornate a 150\u00b0 per 40 minuti circa. <\/p><p>Lasciate raffreddare completamente. <\/p><p>Conservate i Brutti ma Buoni in una scatola di latta o in un vasetto a chiusura ermetica.<\/p>\t<\/div>\n\t<div
