Avrei potuto fare una bella, coloratissima insalata, -nella mia lista infinita di ricette da provare ce ne sono diverse che non vedo l&#8217;ora di assaggiare- ho visto anche un frullato, che non dev&#8217;essere niente male, ma la tentazione di preparare un pesto ha prevalso su tutto, e cos\u00ec \u00e8 stato. Ci vorranno 40 minuti circa a 180\u00b0 ma se volete accelerare i tempi potete usare le rape precotte gi\u00e0 pronte. Fate lessare le patate con la buccia in abbondante acqua. Una volta cotte schiacciatele ancora calde, aggiungete poi la rapa rossa frullata alle patate, 1 uovo intero, sale e farina. Impastate velocemente fino ad amalgamare tutti gli ingredienti, la pasta diventer\u00e0 di un rosso brillante bellissimo. Importante: non aggiungete ulteriore farina all&#8217;impasto, anche se gli gnocchi sembrano molli non spaventatevi perch\u00e9 in cottura si rassoderanno!<\/p>\n<p>A questo punto aiutandovi con una leggera spolverata di farina di semola formate con le mani dei lunghi filoncini di impasto larghi 1 cm circa, tagliateli poi in piccoli tocchetti pi\u00f9 o meno uguali. Fate poi passare gli gnocchi sul dorso di una forchetta infarinata per creare il classico stampo rigato.(facoltativo)<\/p>\n<p>E ora preparate il pesto: in un mortaio, o nel bicchiere di un frullatore, mettete le foglie pi\u00f9 tenere del cavolo riccio, le nocciole tostate, il parmigiano, qualche foglia di basilico, sale e olio poco per volta.
