Una torta rustica che io definirei saporita, gustosa e appagante. Magari -tempo permettendo- da portare nel cestino del picnic di Pasquetta! Una torta con asparagi e un formaggio che amo particolarmente, la <strong>Toma stravecchia: un formaggio pregiato, definito quasi &#8220;da meditazione&#8221;. Il miglior modo di gustarlo infatti \u00e8 a piccole scaglie accompagnato da un buon calice di vino<\/strong>, il suo sapore \u00e8\u00a0intenso dato dalla sua lunga stagionatura, oltre i 12 mesi. All&#8217;assaggio si percepiscono note di fieno, di fiori secchi, ma anche una nota lievemente piccante.<\/p>\n<p>&#8230; questa volta per\u00f2 ho voluto aggiungerlo alla preparazione, semplicemente grattugiato all&#8217;interno, il sapore che si crea \u00e8 un piacevole contrasto assolutamente da provare,\u00a0mi piace quando posso utilizzare prodotti del territorio.<\/p>\n<p>Per la pasta bris\u00e8e, \u00a0facilissima da preparare in casa, mi sono ispirata ad una ricetta (infallibile)\u00a0<a href=\"http:\/\/www.mentaeliquirizia.com\">di Marianna Franchi tratta dal suo libro &#8220;Di class=\"wprm-recipe-name\">Torta rustica con asparagi e Toma stravecchia<\/h2>\n\t<div class=\"wprm-recipe-summary\">\n\t\t<p>Ingredienti per uno stampo da 22 cm&nbsp;<\/p><p><i>Per la pasta bris\u00e9e<\/i><\/p><p>125 g di farina di farro spelta semintegrale&nbsp;<\/p><p>125 g di farina 00<\/p><p>80 g di burro freddo<\/p><p>85 g di acqua fredda<\/p><p>1 cucchiaino di curcuma in polvere<\/p><p>1 pz di sale<\/p><p><i>Per il ripieno<\/i><\/p><p>1&nbsp;mazzo di asparagi<\/p><p>3 cipollotti freschi<\/p><p>100 g di Toma stravecchia&nbsp;<\/p><p>2 uova&nbsp;<\/p><p>4\/6 uova di quaglia<\/p><p>200 ml d panna<\/p><p>erbe aromatiche ( erba cipollina, finocchietto selvatico, prezzemolo)<\/p><p>Olio extravergine d'oliva<\/p><p>sale e pepe q.b<\/p><p>Per prima cosa preparate la pasta bris\u00e9e: Su di una spianatoia unite le farine, la curcuma ed un pizzico di sale, aggiungete il burro freddo a dadini e poco alla volta l'acqua sempre fredda, impastate velocemente fino ad ottenere un composto omogeneo e liscio, formate un panetto, avvolgetelo nella pellicola, fate riposare in frigorifero per 30 minuti. Nel frattempo preparate il ripieno: fate cuocere le uova di quaglia fino a renderle sode, ci vorranno 3\/4 minuti partendo dal bollore. Pulite gli asparagi togliendo la parte pi\u00f9 dura e fibrosa, lessateli in abbondante acqua salata per 10\/15 minuti. In una padella fate rosolare i cipollotti tagliati sottilmente per qualche minuto, spegnete il fuoco e lasciate raffreddare. In una ciotola unite i cipollotti rosolati, unite le uova, la Toma grattugiata, la panna fresca, le erbe aromatiche tritate, sale e pepe, mescolate il tutto, aggiustate di sale e di pepe.&nbsp;<\/p><p>Scaldate il forno a 180\u00b0<\/p><p>Stendete la pasta bris\u00e8e su di un foglio di carta forno leggermente infarinato dello spessore di un paio di millimetri, rivestite lo stampo facendo aderire per bene la pasta su tutti i bordi. Versate il composto di uova e panna, unite gli asparagi, disponendoli nel modo che pi\u00f9 preferite, aggiungete qualche uovo di quaglia tagliato a met\u00e0. Infornate in forno statico per circa 30\/35 minuti. Sfornate e lasciate raffreddare leggermente prima di servire.&nbsp;<\/p><p><i><br><\/i><\/p><p>Note: potete sostituire la Toma stravecchia con del Parmigiano Reggiano stagionato 30
