Punta di diamante di una tradizione culinaria fatta di gesti semplici.<\/strong> \u00a0Anticamente gustati &#8220;al tovagliolo\u201d, ovvero bolliti in acqua salata e serviti caldi, senza condimento, su di un tovagliolo bianco di lino, cos\u00ec da poter assaporare al meglio tutto il sapore del ripieno. Che da tradizione prevede l&#8217;utilizzo di carni miste mescolate a verdura di stagione cipolla e spezie. Decisamente sublimi! &#8230;Quello che vi posso consigliare \u00e8 di provarli almeno una volta nella vita, ne vale la pena! \u201cPlin&#8221; significa \u201cpizzicotto\u201d, il gesto con cui il ripieno viene chiuso tra due sfoglie di pasta fresca all\u2019uovo sottilissima. Esistono moltissime varianti di questa ricetta a seconda nella zona del Piemonte in cui vi trovate. A me piace definirla una cucina di confine, dove le tradizioni si mescolano. E\u2019 cos\u00ec che sono nati questi agnolotti al plin con ripieno di verdura, in qualche modo parenti dei \u201cpans\u00f2ti\u201d liguri, un po\u2019 pi\u00f9 leggeri dai classici agnolotti di carne. Ideali da preparare in questo periodo dell\u2019anno dove le erbe spontanee e le verdure abbondano e sono tenerissime. Giovanni Goria nel suo libro: <a href=\"https:\/\/www.amazon.it\/cucina-del-Piemonte-collinare-vignaiolo\/dp\/8867100270\">&#8220;Cucina del Piemonte collinare vignaiolo&#8221; <\/a>parla di questi agnolotti definendoli Agnolotti &#8220;di magro&#8221; Mescolate il composto con una forchetta prendendo a mano a mano un po\u2019 di farina circostante. Quando il composto non sar\u00e0 pi\u00f9 liquido impastate energicamente sulla spianatoia fino a ottenere una pasta omogenea, liscia ed elastica. Fate riposare per 30 minuti ben coperta a temperatura ambiente.<\/p><p>Per il ripieno: Pulite le verdure e sbollentatele in abbondante acqua leggermente salata. Scolatele per bene e ripassatele in padella con una noce di burro e la cipolla bianca tagliata finemente. Lasciate raffreddare il composto dopodich\u00e9 aggiungete la ricotta, il parmigiano, la noce moscata, la maggiorana, sale e pepe. Mescolate per bene il composto in modo da amalgamare il tutto.<\/p><p>A questo punto formate i vostri agnolotti: stendete la pasta -che dovr\u00e0 essere molto sottile 2\/3 mm. Aiutandovi con un cucchiaino inserite il ripieno lasciando un piccolo spazio tra un mucchietto e l\u2019altro. Piegate la sfoglia a \u201clibro\u201d facendola aderire bene, \u201cPizzicatela\" tra un ripieno e l'altro. Rifilate la pasta con una rotella dentellata. Spolverate gli agnolotti con della farina di semola in modo che non si attacchino. Sbollentate gli agnolotti in abbondante acqua leggermente salata, fate sciogliere il burro in padella con il timo fresco, condite la pasta, prima di servire aggiungete un abbondante grattugiata di
